makes 1 dozen sliders

Red Wine-Molasses Caramelized Onions
1 1/2 lbs 80% lean ground beef
1 1/2 tsp kosher salt
3/4 tsp freshly ground pepper
1 dozen slider-size buns, cut in half
4 oz soft ripened blue cheese
Baby spinach leaves
Whole grain mustard

Prepare the Red Wine-Molasses Caramelized Onions as directed. Set aside. Preheat the grill to Medium heat, about 350 to 400 degrees. Shape the beef into 12 {2-oz} patties. Sprinkle both sides of the beef with salt & pepper. Grill 3 to 4 minutes per side or until desired internal temperature is reached. Remove the burgers from the grill. Top slider buns with spinach leaves, burgers, Red Wine-Molasses Caramelized Onions, blue cheese & mustard.

makes about 1 3/4 cups

1 large red onion
3 medium sweet onions
1 tsp olive oil
1 tsp kosher salt, divided
1/4 tsp freshly ground pepper
1/3 cup red wine
2 Tbsp red wine vinegar
1 tsp molasses
2 Tbsp chopped fresh chives

Cut the ends from the onions & slice in half, from end to end. Peel the outer skins & slice each half, flat side down, into very thin half moon shapes. Heat the oil in a 3.5-quart Wolf Gourmet Saute Pan over High heat. Add all of the onions & cook, without disturbing for 8 minutes. Sprinkle with 3/4 tsp salt & the pepper. Give the onions a good stir. Continue to cook 12 to 15 minutes, stirring on occasion, until the onions begin to caramelize. Deglaze the pan with the red wine, scraping the bottom of the pan of all of the browned bits. Add the vinegar & molasses, stirring well. Cook until most of the liquid evaporates from the pan. Turn off the stove eye & let stand for 10 minutes. Stir in the chives & the remaining 1/4 tsp salt. Use as directed.

The Basic Fundamentals

Prepare the cheesecake up to two days in advance then glaze & pipe the decoration the day before your tailgate party.

15 regular-sized Oreo cookies, broken into quarters
2 Tbsp melted butter
1 {8-oz} package cream cheese, softened
1 {8-oz} package reduced-fat cream cheese, softened
1/2 cup sugar
1 {10-oz} package bittersweet chocolate morsels, divided
1/4 cup cocoa powder
2 eggs
1/2 cup plus 2 Tbsp heavy whipping cream
1/4 cup white chocolate morsels
1 cup powdered sugar
1 Tbsp softened butter

Preheat the oven to 325 degrees. Pulse the quartered, regular-sized cookie pieces in a food processor until finely crushed. Combine the cookie crumbs & the butter. Lightly grease a 13 x 9-inch casserole dish lined with aluminum foil extending over the sides. Press the crumbs into the bottom of the pan. Bake for 5 minutes. Microwave 5-oz {about 3/4 cup} of the chocolate in a small bowl on HIGH power for 45 to 60 seconds, stirring often, until melted & smooth. Let stand 5 minutes. Blend the cream cheese & the sugar with an electric hand-held mixer for about 1 to 1 1/2 minutes on HIGH speed.  Add the melted chocolate to the cream cheese mixture. Blend on LOW speed, about 20 seconds. Add the cocoa powder & blend on LOW speed, about 20 seconds.Add the eggs & blend just until blended, smooth & velvety, about 20 seconds. Pour the batter into the prepared pan over the chocolate cookie crust.

Bake for 28 to 30 minutes or until the center is just set when slightly jiggled. Cool for 1 hour at room temperature. Chill 8 hours or overnight in the refrigerator. Remove the cheesecake from the pan. Gently remove the foil & place on a cutting board or platter. Microwave the remaining 5-oz of chocolate {about 3/4 cup} with 1/2 cup cream in a small bowl on HIGH power for 45 to 60 seconds, stirring often. Whisk until smooth. Pour the ganache over the surface of the cheesecake, spreading to the edges in an even layer. Chill in the refrigerator for 30 minutes to allow the ganache to set completely. Microwave the white chocolate & the remaining 2 Tbsp cream in a medium bowl on HIGH power for 20 to 30 seconds. Whisk until smooth. Refrigerate the mixture for 5 minutes. Beat in the powdered sugar & the butter with an electric hand mixer until creamy. Fill a piping bag fit with a plain tip. Pipe lines over the surface of the cheesecake to resemble a football pattern. Chill until ready to serve. Cut into pieces using a chef knife.

The Extra Point

The cheesecake is equally delicious when prepared with 2 packages of regular cream cheese.

The manner in which a cheesecake filling is blended determines whether or not cracks will be created. Beating in too much air to the egg whites causes the filling to rise in the oven & fall upon cooling which creates the crater. So much depends upon when & how the eggs are incorporated. Mix all of the ingredients well before adding them. Combine the mixture just until they are blended.
