Fritto Misto is a traditional Italian course that literally translates to mean “a mixed fry”. Although the collection of nibbles dipped in a light coating of tempura-style batter can range from hearty meats & vegetables, you’ll often times find a beautiful selection of fruits of the sea included. With a few trick plays, plan to steal this idea & make the play call to execute a game day southern fried appetizer bonanza featuring our coveted fruits of the south. Look no further than the Auburn & Alabama team matchups to guide you in selecting a fine array of foods that will help your tailgating team devour the competition long before kick-off.
The Mississippi Delta is home to boat loads of farm-raised catfish needing very little to shine. Accompany with a game day cocktail inspired dipping sauce & you have a real winner. Deep fried pickles stake their claim as an Arkansas mainstay & with a little smoked sausage tossed into the mix, you have a tasty way to feast on the mascot. But don’t stop there, bacon, ham & pork chops would be just as delicious. Use your imagination & let your taste buds lead the way. For extra fun, jab the opposing team player’s signature end zone moves & sprinkle the deep fried morsels as they’re coming out of the hot grease with more seafood seasoning just like Arkansas Razorbacks No. 83, Jeremy Sprinkle. The Game Plan

How To Set Up The Frying Station
An outdoor fryer with a butane heat source is a great option for frying large quantities of food. A dredging station will be necessary. Organize the food on half sheet pans. Line up the items in the order in which they will be used on a small table. I generally work from the right side of the hot grease to the left, the final item in my lineup being the wire rack to drain the hot bites over. Have several pairs of tongs to use for different tasks. A spider is a great tool for retrieving the food from the grease. Keep the food warm in a 200 degree oven until ready to serve.

The Basic Fundamentals
For the best zone coverage, make sure each dill pickle slice is coated well with the batter. The onion slices will fry up like fritters. They are last in the line up as bits of excess batter may fry up crisp & float to the top of the grease. Discard, if desired. The recipes easily double to fit your fan base.
2 cups soft wheat self-rising flour
1 cup plain yellow cornmeal
1 cup cornstarch
2 Tbsp seafood seasoning blend
2 tsp kosher salt
2 cups beer
2 eggs
1/2 {16-oz} jar dill pickle slices {about 1 cup}
1 lb smoked sausage, cut into 1/2-inch thick slices
1 lb catfish, cut into 1/2-inch strips
1/2 medium red onion, very thinly sliced {about 2 cups}
Vegetable oil
Zesty Garlic-Dill Sauce
Bloody Mary Cocktail Sauce
Coarse grain mustard
Garnish: Fresh parsley
Organize the ingredients in small bowls. Pour the oil to a depth of 1 1/2-inches in a Dutch oven & heat to 360 degrees. Meanwhile, whisk together the flour, the cornmeal, the cornstarch, the seafood seasoning & the kosher salt in a large bowl. Combine the beer & the eggs in a small bowl. Whisk the egg mixture into the flour mixture until well blended. Drop the pickles, a few at a time, into the batter, tapping off any excess. Fry, in batches, 1 to 4 minutes, flipping as necessary, or until golden brown. Remove with a slotted spoon & place on a wire rack over a sheet pan. Allow the oil to return to 360 degrees between batches. Keep warm in a 200 degree oven. Repeat the procedure with the smoked sausage & the catfish. Fry each like item together for even cooking times. Toss the onion slices into the remaining batter. Drop spoonfuls of the batter coated onions into the oil & fry as directed. Expect a yield of approximately 1 dozen onion fritters. Discard any remaining batter not needed. Serve with the Zesty Garlic-Dill Sauce, Bloody Mary Cocktail Sauce & coarse grain mustard. Garnish, if desired.

Flake the fried fish & serve in flour tortillas with an array of Mexican fiesta toppings such as shredded cabbage, diced mango & salsa for an additional game winning idea.
Zesty Garlic-Dill Sauce
makes 2/3 cup

Hold on to the pickle juice. It adds distinctive twang to this addictive swag sauce. Fresh dill brightens the flavor & provides a dash of gridiron green color.
1/2 cup mayonnaise
2 Tbsp plus 2 tsp dill pickle juice
1 1/2 tsp freshly chopped dill
1 garlic clove, pressed
1/4 tsp ground red pepper
1/4 tsp freshly ground pepper
Kosher salt
Whisk together all of the ingredients in a small bowl.
The Extra Point
Drizzle the sauce over sandwich wraps & chef salads for a strong finish.
Bloody Mary Cocktail Sauce
makes 3/4 cup
Run The Option
Paying homage to the Auburn Tigers Heisman Trophy winner, No. 2 Cam Newton, this game day classic cocktail strikes pose. A dab of liquor is stirred into the ketchup-based condiment to transform effortlessly into a zippy sauce perfect for southern fried tailgating nibbles.
1/2 cup ketchup
1 Tbsp prepared horseradish
1 Tbsp vodka
2 tsp Worcestershire sauce
1 tsp sriracha
1 tsp lemon juice
1/4 tsp celery salt
Whisk together all of the ingredients in a small bowl.
The Extra Point
Spoon over fish sandwiches or serve this tangy sauce with boiled shrimp & other seafood favorites.

How To Make A Tempura Batter
There is an art to achieving a perfect tempura batter. Many Japanese kitchens have one specific person dedicated to the task. With a few game day staples & southern elements added, expect this version to be a little puffier but still crisp & tasty. Arm yourself with these tips for successful fry duty.
The Technique
Do not prepare the batter ahead of time. This will prevent the gluten in the flour from forming. A bit of plain yellow cornmeal provides extra southern fried crunch but also adds a gluten-free element. Soft wheat flour & cornstarch also helps maintain a crisp exterior.
Kick-off with a cold batter to help cling to the foods you’ll be frying. Without getting too complicated, ice cold beer is a sure bet & readily available. You can also try chilled club soda or vodka. The chemical make up of vodka prevents gluten development.
Alabama vs Arkansas Razorbacks
The first meeting between the two teams took place in the 1962 Sugar Bowl with Paul “Bear” Bryant as the head coach at Alabama & Frank Broyles leading Arkansas. The Tide came out on top with a 10-3 victory. After an 18 year hiatus, the teams would meet again in New Orleans in the 1980 Sugar Bowl, this time with Lou Holtz leading the Razorback charge & the Tide would come out on top yet again under the direction of Bryant. Unfortunately, it would also prove to be his last Sugar Bowl appearance as the head football coach for the Alabama Crimson Tide in one of the most sought after bowl game invitations in the country. In recent years, the matchup has become a regular series, classic SEC rivalry. The Crimson Tide holds the longest winning streak against the Razorbacks at 8 spanning from 2008 to 2015.
Auburn vs Mississippi State Bulldogs
With a history between the two schools spanning over 100 years, the first matchups played in Starkville more than likely brought folks to campus via train. The Junction, which marks where the train rails crossed the campus, have been preserved & celebrated contributing to the rich history of the University. Today, The Junction hosts a flurry of activity on game day where tailgating & socializing rank No. 1.
In order for Auburn to come out on top in this showdown, they’ll need to shake their bluesy Mississippi State of mind. Although the Tigers lead the series having clenched the most wins with 61, Hail State fans & players have remained top dog the last two years in a row. The teams have been meeting every year since 1955, the same year Mississippi born blues legend Papa Lightfoot recorded one of his last tracks “Mean Old Train”. The game will mark the first road trip of the season for the Tigers set to kick-off at 11 am in Davis Wade Stadium.
