Roma Tomatoes
Roma tomatoes are a popular variety used for making tomato paste & sauces. Fresh applications include sauces, salsas, beverages & main dish staples. They are also referred to as Italian Plum Tomatoes & feature a firm texture & elongated shape. Although they are known for typically having less seeds, they may be removed using several different methods, if desired, to help keep the flavor & texture of certain recipes more intense. How To Fillet A Tomato
Removing the seeds & some of the flesh is a good technique to use to keep some recipes from retaining excessive juice. Pico de Galo benefits from the method tremendously.
The Technique
Slice the end from the tomato & discard. Slice the tomato in half lengthwise. Slice each half down the center again. The tomato will be quartered. Using a paring knife, slice the center pulp from the tomato, including the seeds. There will be some seeds remaining in the cavity. Use your thumb to push the remaining seeds away. Cut the remaining pieces into a small dice.
