The Technique
Mushrooms are mostly comprised of water so it’s important to avoid rinsing them under the faucet or the outer texture will become undesirable & slick. Gently remove visible dirt & grit with a paper towel. Slice away the ends using a paring knife, then cut them according to recipe instructions. To properly cook oyster mushrooms, high heat & evaporation will result in the most pleasing texture & golden color.
