makes 7 cups

4 quarts water
1 tsp kosher salt
1 lb orzo pasta

Bring the water & the salt to a boil over Medium-High heat in a Dutch oven. Stir in the orzo. Cook 8 to 9 minutes or until al dente. Pour the pasta into a fine wire mesh colander. Use as directed in recipe applications.

Orzo is a great source of carbohydrates so if you lead an active lifestyle, this versatile pasta is a good meal choice. I prefer it over rice as I find the texture a bit more pleasing. Follow these additional pointers for success in your own kitchen.

The Technique

Cooking orzo is a relatively straight forward process. When adding it to soup recipes, be mindful that it will continue to cook & expand as long as it is hot. Often times restaurants will cook rice & pasta separately. Pasta can be flash warmed in boiling water & added to individual servings just before they are presented to guests. If adding the orzo at the end of the cooking process, stir it into the soup & allow it to cook 5 minutes. Turn off the heat & let it stand about 15 minutes before serving. If chilled pasta applications are desired, immediately rinse the hot cooked pasta under cold water to stop the cooking process in order to preserve the shape & texture. Toss it in a little oil to keep it separated.
