How To Make A Quenelle
Mascarpone Cream
Plated desserts are such lovely ways to serve guests something sweet & whether your gathering is a seated dinner or a more casual affair, they need not be complicated. Many southerners have a Classic Buttermilk Pound Cake under the glass dome during the holidays which signals endless possibilities after a beautiful meal. Slice the cake into wedges & drizzle it with Bourbon Praline Sauce or garnish with a few Sugared Fresh Cranberries but it can also be elevated into a simple tiramisu. The dessert that is traditionally prepared by dipping lady fingers in coffee & layering them in a dish with a rich custard of eggs, sugar & mascarpone cheese is chilled & then topped with chocolate before slicing & serving. You can create a similar version of this irresistible combination by simply brushing pound cake slices with cold, strong brewed coffee then topping them with a quenelle of Mascarpone Cream & a little shaved chocolate. Mascarpone Cream
makes about 1 1/2 cups
1/2 cup heavy cream
3 Tbsp powdered sugar
4-oz mascarpone cream, softened
Beat the cream & the sugar with an electric mixer until fluffy & soft peaks are beginning to form. Gently fold the mascarpone into the sweetened whipped cream. The mixture will be thick & appear slightly grainy however the texture will be smooth on the tongue.

How To Make A Quenelle
A quenelle offers lovely dessert presentations & elevates the most simple combination into something specular with a few quick motions using two everyday spoons.
The Technique
Portion a small amount of the Mascarpone Cream on a spoon. Using a second spoon of the same size, begin shaping the mixture by transferring the cream back & forth between the spoons several times to form an oval shape. The Mascarpone Cream will take on the shape of the spoon bowl. Gently transfer the quenelle to the top of the dessert.
