Zucchini

Zucchini is a summer squash that’s highly abundant during the warm weather months & it offers a host of uses in the kitchen. It adds vibrant contrast to classic vegetable casseroles & when thread onto skewers with crookneck squash, onions, tomatoes & mushrooms, zucchini offers beautiful color & flavor to the plate. Nutritionally, it’s low in calories while being good sources of vitamins A, C & potassium. One of the most simple ways to enjoy zucchini is by adding it directly to the grill grate for cooking & the most valuable benefit is that it can be cooked along side main courses such as chicken, pork & steak for even quicker meal solutions. How To Grill Zucchini

When purchasing zucchini, choose small, firm vegetables that are blemish free. Store them in the refrigerator up 7 days. To prepare them for cooking applications, simply rinse under cool running water. The ends may be discarded & then sliced, diced or grated. If the zucchini is particularly small, the vegetable may be cut lengthwise for grilling & leaving the ends in tact makes for a beautiful presentation. The pieces are a good size to place directly on the grate & the charred marks offer a lovely finish to recipes.

Cut the zucchini in half lengthwise & brush with olive oil. Sprinkle with a bit of kosher salt & freshly ground pepper.

Grill over Medium-High heat {350 to 400 degrees} 10 minutes, turning halfway during cooking. Use as directed in specific recipe applications.
