Honey-Lavender Simple Syrup

Fresh lavender is a jewel in the kitchen as it not only offers bold, distinctive flavor to recipes. Lavender’s versatility not only imparts bold lovely flavor to grilled specialties the scent perfumes cookies, cake & sugar flawlessly. Beyond the table, the sprigs can be paired with seasonal blooms such as vintage ecru roses making it a lovely alternative to traditional greenery selections. When used as a focal point to wedding boutonnieres, miniature herb bouquets not only add a fresh element but a delicious fragrance, too. As summer approaches, pair the sprigs with narrow leaf zinnia, Queen Anne’s lace & shasta daisies for simple, sweet arrangements that can brighten a host of casual outdoor gatherings.

makes about 1/4 cup

Dried lavender may be substituted. Use 1 teaspoon in place of the fresh. Proceed with the recipe as directed. 

1/4 cup honey
1/4 cup water
1 Tbsp chopped fresh culinary lavender buds

Bring the honey & the water to a boil over Medium-High heat in a small saucepan. Turn off the heat. Add the lavender & let stand 10 minutes. Pour the mixture through a fine wire mesh sieve. Discard the solids. Chill 30 minutes or up to 1 month. Use as directed in specific recipe applications.

The Technique

Prepare the syrup up to 3 days ahead of time. Transfer it to a small heirloom pitcher & place it on the cocktail cart to sweeten beverages such as iced tea & mixed concoctions. In the pastry kitchen, use it to moisten cake layers by brushing generously over surfaces.
