Garlic
Garlic has long been used in global cuisine but it also offers health benefits from fighting the common cold & flu to reducing blood pressure when consumed on a daily, consistent basis. It’s filled with manganese & vitamins C & B6. Garlic is closely related to onions, leeks & shallots, however it’s home is in the allium genus. It may be minced & used in salad dressings or quick stovetop vegetable sautés or to season slow simmering sauces. Slice the top quarter portion away from the garlic, place in foil, drizzle with olive oil & season with salt & pepper. Wrap it tightly then bake at 400 degrees for 30 minutes to 40 minutes or until soft then squeeze the pulp from the bulb & serve it over bread or with braised meats for something a bit more indulgent. How To Select & Use Garlic In Recipe Applications
It’s always best to choose loose garlic bulbs from bins rather than purchasing them in preportioned packaging. Look for firm bulbs that are heavy in the hand. The skin encasing the cloves should be dry but unbroken. Do not store it in the refrigerator but rather in a cool, dark spot in your kitchen.
The Technique
Garlic should be prepared for use just before it is needed in recipes such as in the case with Parsley-Garlic London Broil. Remove the number of cloves necessary for the specific dish. Use the back of a chef knife or the palm of your hand to smash each one on a wooden board. Once it breaks open, peel away the outer skin. The cloves may then be minced finely with a knife or placed in a garlic press & extracted.
