Cooking & Baking Essentials
The Profile
Chilean Blueberries
When our end of summer production of fresh berries begins to dwindle, look to Chilean blueberries to satisfy a number of your favorite recipe cravings. Chile is not only the largest exporter of blueberries in the world, the growers are committed to developing bigger & better berries. The season, which runs from October to April, offers a crop available right now from your local market that boasts large, sweet berries & are ideal to use immediately in salads but baked specialties benefit tremendously from the bright, sweet flavor for a late winter treat. Cook them briefly to make a Fresh Blueberry Filling then dollop it over pinwheel-style or braided breakfast Danish dough before baking.

How To Prepare Blueberry Fillings With Thickeners
Blueberries are a nutrient dense fruit filled with good for you antioxidants, vitamins, minerals & fiber. They hold up rather well in baking applications particularly when they are cooked first to make lovely fillings. Blueberries may be used to prepare a variety of specialties ranging from pies to crisps or irresistible muffins & buckles. They can carry an entire flavor profile or simply serve as an accent making them ideal to use as a garnish for lovely plated dessert presentations.
The Technique
Although blueberries contain a good amount of natural pectin, thickeners help them retain shape when other ingredients will be folded together. Cornstarch may be used not only to ensure a stable blend but it aides in holding the rich, vibrant color beautifully. Follow specific recipe instruction to use it properly.
