Brown or yellow onions, allium cepa L., refer to several types of dry, strongly flavored onions. They are all purpose onions which account for nearly 90% of those used for storage over a period of time. Brown onions may be used for all sorts of classic recipe applications ranging from sautéing them for main dishes & soups to grilling thick slices for use in appetizers & over hamburgers. The interior of the onions may be cream, white or have a greenish undertone to a neutral color. There are many varieties that fall under this broad category of onions but the white tend to be the most robust due to a high sulfur content. These versatile aromatics are typically shaped as spheres with a medium-size weighing approximately 8-ounces. Brown or yellow onions tend to absorb moisture which in turn can cause them to mold or sprout. The onions will last longer if they are placed in mesh bags or open storage bins so the skin remains tight. Brown or yellow onions should be stored in a cool, dark location & have a shelf life of approximately one to two months. They are wonderful when sliced, breaded & deep fried for crisp Buttermilk Onion Rings. For this application, slice a small piece of the onion away from the side to create a flat surface then place it on a cutting board. Using a freshly sharpened chef knife, thinly slice the vegetable into rings.
