Black Peppercorns
Black peppercorns add such distinctive flavor to a variety of recipes from casual appetizers & dips to more holiday worthy main dish entrees. They are readily available so many times their role in elevating foods is taken for granted. Peppercorns are the fruit harvested intermittently from the piper nigrum vine. They are grown in clusters & once picked, allowed to dry. While black continues to be the most common, red, white & green are actually grown together on the same vine. It is always best to use the freshest peppercorns possible when cooking & to grind them as needed during procedures. A traditional mill works beautifully or you may choose from a variety of styles that suit your personal style preference. The key is to find one that may be filled relatively easily. The top portion will generally have a mechanism designed to turn that produces the ground peppercorns with a setting on the bottom or side that allows you to set the size of the pieces while in use. The Technique
Invest in a good mill specifically designed to grind the peppercorns in a variety of sizes. The smaller setting delivers a fine misting of spice to flavor softer textured foods including mashed potatoes, grits & rice. Use the larger setting to highly season large cuts of meat from beef tenderloin to roasted turkey. The grains will impart bold notes over the surface & carry the flavor throughout the portions once sliced for serving.
