Alfredo Sauce
The most simple Alfredo sauces consist only of butter & cheese however more modern, American versions have cream added to them. Reducing the cream & the butter only a short bit on the stove top creates not only a decadent sauce but one with a good consistency. For a thicker version, just allow the mixture to continue to cook an extra minute or two. Once you learn how to prepare this recipe favorite, you’ll be making it quite frequently. Add cooked fettuccine noodles & you have a classic dinner that’s difficult to beat.
Basic Alfredo Sauce
makes 4 servings
1 pint heavy whipping cream
6 Tbsp butter
3/4 cup freshly grated Parmesan cheese
1/4 tsp kosher salt
1/8 tsp ground nutmeg
Freshly ground black pepper
Reduce the cream & the butter in a large sauté pan over Medium heat. Whisk the mixture occasionally until reduced by 1/3, about 5 minutes. Turn off the heat. Add the Parmesan cheese, the kosher salt, the nutmeg & a smattering of freshly ground pepper. Whisk the mixture until the cheese is melted. Use as directed in specific recipe applications.

How To Make Alfredo Sauce
The secret to a good cream sauce is to be certain to allow the cream & the butter ample time to reduce. If it’s pulled from the heat to soon, you’ll encounter a thin mixture that doesn’t cling to noodles properly.
The Technique
