The Technique
Sweet Pickle Remoulade
Sweet Pickle Remoulade is a delicious condiment that may be prepared quickly. Accompany it with Beer Battered Cajun Fried Catfish, boiled shrimp & fried oysters or thin the sauce with a smidgen of buttermilk to make a tasty salad dressing. Although this version is made with standard mayonnaise, Classic Aïoli may be used for additional decadent flavor & the citrus would make a lovely compliment. Learn how to prepare a delicious sauce that may be used in a variety of ways to serve with tailgating recipes & so much more.
Sweet Pickle Remoulade
makes about 1 1/2 cups
Run The Option
Lightened mayonnaise may be substituted, if desired.
1 cup mayonnaise
1/4 cup coarsely chopped sweet & spicy pickles
3 Tbsp Creole mustard
2 Tbsp chopped fresh parsley
1 garlic clove, pressed
1 tsp Creole seasoning
Stir together all of the ingredients in a medium bowl.
The Extra Point
Substitute dill pickles for the sweet pickles & try it with steam shrimp.

How To Use A Garlic Press
It’s important to make a few small investments & stock your kitchen with valuable tools & equipment so that once it becomes time to complete tasks, preparations may be accomplished quickly. In most cases, these items may be purchased from cook stores or supercenters for your convenience. If you do not already have them, begin adding them to your collection right away.
The Technique
A garlic press is by far one of my most preferred methods of preparing the cloves for recipe applications. It smashes the flesh & releases better garlic flavor & I find that it isn’t quite as harsh compared to mincing it, particularly when it will not be cooked. Remove the skin by placing the cloves on a cutting board & smash them with the back of a chef knife. Retrieve the flesh & place it in the compartment of the tool. Press the garlic through & use a paring knife to swipe it away then add it to specific applications when cooking.
