Fresh Herb-Chèvre Cheesecake
Fresh Herb-Chèvre Cheesecake is a simple way to indulge in a few spring gifts. Chives, parsley & rosemary gently flavor this savory appetizer & blend beautifully with the tangy notes from the goat cheese while fresh lemon brightens the nibble. Serve with blanched & chilled haricot verts or green beans, English cucumber slices & a variety of crackers for interest. A spritzer served in goblets is the perfect beverage to accompany it. Although the batter is baked in 3 {4-inch} springform pans, it may easily fit into one 6-inch springform pan so be sure to increase the bake time by 25 minutes or so or until it is just set in the center. Fresh Herb-Chèvre Cheesecake
makes 12 servings
3/4 cup finely crushed pita crackers
1 1/2 Tbsp melted butter
11-oz cream cheese, softened
6-oz goat cheese
1 small garlic clove
1 Tbsp fresh lemon juice
1 Tbsp chopped fresh parsley
1 Tbsp snipped fresh chives
1 tsp chopped fresh rosemary
1/4 tsp kosher salt
1/8 tsp freshly ground pepper
1 egg
Garnishes: Lemon rind, fresh herbs & almond slices
Cracker & crudité
Preheat oven to 325 degrees. Line a 3 {4-inch} springform pans with parchment paper & lightly grease with cooking spray. Place them on a half sheet pan. Combine the cracker crumbs & the butter, then press firmly into the bottom of the pans. Bake 8 minutes. Remove from oven. Set aside. Beat the cream cheese, the goat cheese, the garlic, the lemon juice, the parsley, the chives, the rosemary, the salt & the pepper on Medium speed with a mixer until fluffy. Add the egg & blend on Low speed until combined. Spoon the mixture over crust & spread to the pan edges.
Bake 25 minutes or until center is just set when jiggled. Remove from the oven & gently run a paring knife between the cheesecakes & the pans. Cool 1 hour. Cover and refrigerate 4 hours. Place the cheesecakes on serving plates. Garnish, if desired. Serve with crackers & crudité.

How To Purchase & Store English Cucumbers
One of the benefits of an English cucumber is that the seeds need not be removed as in the case of more traditional varieties. They may be grated & added to dressings or sauces, sliced for salads & arranged on platters for use with dips & spreads.
The Technique
Available throughout the year, English cucumbers may be found wrapped in plastic in the produce department of the market. When purchasing, they should measure approximately 12-inches or so in length & should feel firm from end to end. Avoid vegetables that have small soft spots throughout & note whether decay is beginning at either end of the cucumber. Once home keep the cucumber wrapped in the original plastic for storage & remove just a small amount for slicing the amount of the vegetable you plan to use. Rinse it under cool water before preparing further for recipe applications. Expect a shelf life of approximately 7 to 10 days.
