Whole Wheat Garlic-Butter Rolls

Whole Wheat Garlic-Butter Rolls may be prepared from pizza dough & used with a variety of main dish meal solutions ranging from Four Cheese Manicotti & Lasagna Bolognese to traditional spaghetti or homemade ravioli. If an appetizer is desired, just a bit of pepperoni & cheese completes the task. Whether you plan to host friends for a birthday celebration or a casual end of summer gathering, be certain homemade rolls make the menu as guests will rave over these delicious gems. 


Whole Wheat Garlic-Butter Rolls

makes 2 dozen

4 {6-oz} portions refrigerated Whole Wheat Pizza Dough
1/4 cup melted butter
2 small garlic cloves, pressed
3 Tbsp freshly grated Parmesan cheese
Kosher salt & freshly ground black pepper
Garnishes: Crushed red pepper flakes, Parmesan cheese & fresh basil

Remove 4 {6-oz} pieces Whole Wheat Pizza Dough from the refrigerator. Press the air out of the dough, then portion into {1-oz} pieces. Roll each piece of dough into a ball. Place into 3 lightly greased 7-inch pans. Cover loosely with plastic wrap. Let stand 1 hour.

Preheat the oven to 375 degrees. Stir together the butter & the garlic in a small bowl, then pour it over the top of all of the doughs. Sprinkle with the cheese. Bake 16 to 18 minutes or until the cheese melts & the bread is golden brown. Remove the bread from the pan & transfer to a serving plate. Sprinkle with salt & pepper. Garnish, if desired.

How To  Select & Use Garlic In Recipe Applications

It’s always best to choose loose garlic bulbs from bins rather than purchasing them in preportioned packaging. Look for firm bulbs that are heavy in the hand. The skin encasing the cloves should be dry but unbroken. Do not store it in the refrigerator but rather in a cool, dark spot in your kitchen.

 Garlic should be prepared for use just before it is needed in recipes. Remove the number of cloves necessary for the specific dish. Use the back of a chef knife or the palm of your hand to smash each one on a wooden board. Once it breaks open, peel away the outer skin. The cloves may then be minced finely with a knife or placed in a garlic press & extracted.
