Miniature Lemon Mousse Crêpe Cakes

A simple lemon mousse can be prepared with a little cream cheese, fresh citrus & whipped cream when a Bavarian cream may seem out of reach. A crêpe cake is a simple stack that may be layered with all sorts of tempting fillings. They may be served rustic or finished & iced much like a traditional cake. When miniature crêpes have been prepared, a beautiful presentation designed for each guest may be offered. makes 4 servings

1/3 cup all purpose flour
1 Tbsp plain yellow cornmeal
A pinch of kosher salt
1/3 cup buttermilk
3 Tbsp hot water
2 Tbsp melted butter
1 Tbsp honey
2 eggs
A smattering of butter
1 {8-oz} package cream cheese, softened
1/2 cup sugar
1 tsp fresh lemon juice
1/2 tsp lemon zest
6 Tbsp heavy whipping cream
Garnish: Lemon rind

Whisk together the first 9 ingredients in a medium bowl until completely smooth. Let stand 30 minutes. Heat a small non-stick skillet over Medium heat with a smattering of butter. Portion 2 teaspoons of the mixture per crepe into the skillet. A small spring release disher works well for this task. Cook, in batches, about 1 minute or until the surface forms a skin & the edges are golden on the bottom. Flip the crêpes & cook an additional 15 to 20 seconds. Remove the crêpes & place over a wire rack. Repeat the process with the remaining batter to create approximately 32 crepes. Cool 1 hour. 

Beat the cream cheese, the sugar, the lemon juice & the lemon zest with an electric hand mixer in a medium bowl until whipped & smooth. In a separate bowl with clean beaters, whip the cream until soft peaks form. Fold the whipped cream into the cream cheese mixture & portion it into a piping bag fit with a small flat tip. Layer 8 crepes with the lemon mousse on dessert plates to create a stack. Garnish, if desired.

An effortless solution is to proceed with cooking them, then make the necessary adjustments once they are removed from the skillet.
