Salsa Fresca
makes 3 cups
1 lb roma tomatoes, coarsely diced
3 Tbsp diced sweet onion
1 garlic clove, pressed
1 Tbsp minced jalapeño
1 Tbsp chopped fresh cilantro
1 Tbsp fresh lime juice
3/4 tsp kosher salt
Freshly ground black pepper
Combine the tomatoes, the onion, the garlic, the jalapeño, the cilantro, the lime juice, the salt & a smattering of pepper in a medium bowl. Let stand 10 minutes. Use as directed in specific recipe applications.
