Rosemary-Garlic Eye Of Round Roast
makes 4 servings
1 {2 1/2-lb} eye of round beef roast
2 tsp kosher salt
1/2 tsp freshly ground black pepper
1 Tbsp olive oil
1 Tbsp freshly chopped rosemary
2 large garlic cloves, pressed
Remove the eye of round beef roast from the refrigerator. Let stand 30 minutes. Preheat the oven to 450 degrees. Meanwhile, combine the salt & the pepper, then coat the beef on all sides. Place the roast on a wire rack over a quarter sheet pan. Bake 15 minutes. Turn off the oven & do not open the door. Let stand 1 1/2 hours. Remove the roast from the oven. Combine the oil, the rosemary & the garlic in a small bowl. Brush the mixture over the roast. Thinly slice the beef using a sharpened carving knife.
