The Profile
Red Potatoes
Red potatoes are a versatile root vegetable ideal for a variety of recipe applications. They may be roasted, boiled or accompany braises with onions, carrots & beef chuck roast to produce instant meals. Red potatoes contain less starch compared to russets which result in a creamier texture. When choosing them for purchase, look for skins with a deep red hue & they should appear relatively smooth with a few brown speckles over the surface. They are available in sizes from petite to large with an overall round shape. The smallest varieties are often labeled as new potatoes which are simply young versions of their larger counterparts. How To Choose Red Potatoes For Cooking Applications
Red potatoes are a versatile root vegetable that come in a variety of different sizes from which to choose. The larger tubers may be purchased in convenient 5-pound bags & are ideal for many cooking techniques such as boiling to produce a creamy textured mashed potato. They pair well with beef cuts including cube steak for use in a tasty Smothered Chicken Fried Steak as well as ribeyes, New York strip steak, skirt steak & flank steak.
The Technique
When oven roasted red potatoes are desired, look for the petite-sized new potatoes portioned in 2 to 3-pound bags. The skin may be left on since it is thin. Rinse them under cool water & gently scrub the exterior with a vegetable brush to remove any dirt or loose particles. The red potatoes should be small enough to cut in half or into quarters so they bake evenly. Place the cut potatoes in a large prep bowl. Drizzle them with oil & the salt. Toss them until they are generously coated with the ingredients, then transfer to a well oiled half sheet pan for roasting.
