Red onions, more technically classified under the allium cepa cultivar, refer to several types of onions that are produced & sold under different names throughout the globe. Red onions typically tend to be rather large in size however there are some varieties in which the shape & weight are smaller. Red Italian onions, also referred to as Torpedo, are elongated & more spindle-shaped. They have a sharp taste but are considered more mildly flavored than many of the other types. Red wing onions have a very mild flavor while Flamenco red onions may be noted by their round shape with a distinctive neck. The skin is quite glossy & vibrant with meaty, thick flesh. How To Store & Use Red Onions

Red onions have a bit of a sharp taste. They may be identified by their deep red or purple & white coloration once sliced. They are ideal for a number of recipe applications including pickling. When preparing them for this particular method, use a serrated utility knife in order to slice them into rings so they will fit snuggly in pint-sized jars allowing brining mixtures to cover completely.

Red onions should be stored in a cool, dark location & have a shelf life of approximately one to two months. They are wonderful when served with a variety of cheeseburger combinations particularly when topped with bacon & cheddar cheese or when pickled over sandwiches that feature the Eye Of Round Steak cut. Try them very thinly sliced in pasta or leafy green salads for good flavor. Red onions are wonderful when caramelized as the strong taste mellows. Accompany with steaks such as T-Bones, Ribeyes & New York Strips.
