Poppy Seeds
Poppy seeds are the kidney shaped, edible oilseeds that are harvested from the dried pods of the papaver somniferum commonly known as the breadseed poppy. The flowering plant from which they come from is a member of the Papaveraceae family. It is considered an annual herb that grows approximately 3 to 4 feet high with a gray-green coloration that produces flowers ranging from bold reds to blush pinks. Poppy seeds may be used in a variety of baked goods & fillings. The Czech Republic produces 31% of the seeds available for edible consumption while India is noted as one of the leading importers of the commodity. The seeds may range in color from blue to black.
Lemon-Poppy Seed Filling
makes 1 1/2 cups
Kolaches baked with a poppy seed filling are one of the most traditional ways the classic Czechoslovakian pastry is prepared. It may be used as a substitution when making Lemon-Cream Cheese Buttermilk Kolaches.
1 1/2 cups poppy seeds
3/4 cup sugar
1 Tbsp all purpose flour
A pinch of kosher salt
3/4 cup water
1/4 cup lemon juice
1 Tbsp butter
Whisk together the first 4 ingredients in a 2-quart saucepan. add the water & lemon juice. Bring the mixture to a rapid simmer over Medium heat & cook, stirring constantly, until thickened, about 5 minutes. Remove from the heat. Cool completely, about 1 1/2 hours. Use as directed in specific recipe applications.

How To Store, Cook & Bake With Poppy Seeds
Poppy seeds offer such versatility to baked goods. They may be used to top dinner rolls & hamburger buns or be blended into batters & doughs to create interesting texture to southern tea breads, coffee cake, muffins & sandwich bread.
The Technique
Poppy seeds may be purchased in bulk as they last approximately 2 to 3 years. Be certain to place them in a container with a good seal on the lid & in a cool, dry location at room temperature. Add them to dry ingredients if planning to integrate them into doughs or use an egg wash to brush over surfaces before baking to use as an ornamental look to breads, pastries & rolls.
