A perforated skimmer is a valuable tool every kitchen should have when frying foods. A long handle with a large, round flat base makes retrieving items from hot oil safe & effortless. The perforations allow grease to drain from the food which in turn helps retain crispy exteriors & delicious flavor. It’s also a wonderful tool to use for removing items from boiling water including seafood, corn on the cob & new potatoes as well as some small pasta shapes. How To Choose A Perforated Skimmer
Several perforated skimmers are available & will be able to accomplish many kitchen tasks. They are ideal for use when preparing side dishes such as fried okra, onion rings & potato chips particularly due to their size. The wide, flat base will allow you to remove items from hot oil in several small batches & prevent over browning that can occur at the end of frying times.
The Technique
A heavy duty, stainless steel perforated skimmer is my top choice however they are available in many finishes. Some styles are designed with more of a cupped base ideal for skimming soups & stocks. They contain small foods well & allow liquids or grease to drain from them. A hollow handle reduces the transfer of heat thus keeping it cool. The hole at the top of the handle allows them to be hung. Nylon & silicone perforated skimmers are ideal for use over non-stick surfaces & keep pans free from scratches.
