Spinach-Pecan Piadine
Piadina is a traditional Italian flatbread most commonly prepared as a simple dough then cooked on a griddle. It may be topped with a variety of ingredients & folded in half to create delicious sandwiches if you will. Whole Wheat Pizza Dough may be used to replicate the idea & baking the flatbread in the oven gives the opportunity for the cheese to melt for wonderful added flavor. Spinach-Pecan Piadine is a straightforward approach to the classic that is certainly filling & satisfying. Learn how to make them in your very own kitchen.
Spinach-Pecan Piadine
makes 4 servings
4 {6-oz} portions refrigerated Whole Wheat Pizza Dough
6-oz fresh Mozzarella cheese
2 cups fresh spinach leaves
1/4 cup chopped toasted pecans
4 tsp balsamic vinegar
4 tsp olive oil
Kosher salt, freshly ground black pepper & crushed red pepper flakes
Remove 4 {6-oz} piece Whole Wheat Pizza Dough from the refrigerator. Press the air out of the dough. Drizzle a bit of olive oil on two half sheet pans, then top with the dough. Press them into a 7-inch circle. Cover loosely with plastic wrap. Let stand 20 minutes.
Preheat the oven to 425 degrees. Sprinkle the cheese over the dough. Bake 10 to 12 minutes or until the cheese melts & the bread is golden brown. Remove from the oven. Toss together the spinach, the pecans, the balsamic vinegar & the 4 teaspoons olive oil in a small bowl. Sprinkle with a smattering of salt, black pepper & crushed red pepper. Portion the spinach mixture over the warm bread. Fold in half, if desired or use a knife & fork to serve.

How To Toast Pecans
Toasting pecans ahead adds an extra layer of depth to recipes ranging from Pecan Biscotti & candies to savory delights. Any time it’s included in the process, do not over look this key step.
The Technique
Arrange 1 cup pecan halves on an ungreased baking sheet. Bake at 350 degrees for 6 to 8 minutes or until fragrant. Cool completely. Use as directed in recipe preparation.
