Miniature Jalapeño Macaroni & Cheese
A collection of petite-sized macaroni & cheese appetizer portions are a fun way to serve this classic side dish when parties are in order. Summer produce pairs beautifully with them including fried okra & an array of tomato salads while irresistible miniature corn muffins can’t be beat. Think smoked chicken sliders & barbecue crostini for a hearty accompaniment. In order to achieve the look, prepare Jalapeño Macaroni & Cheese as directed. Omit the large baking dish & instead, portion a generous tablespoon of the cheese pasta into the desired number of miniature gratin-style ramekins. Place on a quarter or half sheet pan & top with some of the cheese. Bake 400 degrees 12 to 14 minutes or until golden brown & bubbly throughout. Garnish with freshly ground black pepper. If a slightly larger portion is desired, 6 shallow gratin dishes may also be substituted. Simply bake a few additional minutes. How To Prepare & Freeze Miniature Jalapeño Macaroni & Cheese
Southern recipe favorites that may be prepared well in advance, then frozen for parties make entertaining so much easier. Just as a large dish of Jalapeño Macaroni & Cheese may be frozen up to one month, then baked so can these smaller counterparts.
The Technique
A few pieces of equipment will be necessary in order to complete the task. Read through the recipe before beginning. Here’s what you should know.
No. 1
Prepare the Jalapeño Macaroni & Cheese as directed according to recipe instructions. Portion in lightly greased miniature ramekins.
No. 2
Top each serving with some of the remaining shredded cheese, then flash freeze for 2 hours. Next, cover the ramekins with plastic wrap & store in the freezer up to one month.
No. 3
Remove the plastic wrap from the ramekins. Place the frozen side dishes on a sturdy quarter or half sheet pan. Bake 400 degrees 12 to 15 minutes or until hot & bubbly throughout.
