Believe it or not, there is a proper technique for achieving the perfect homemade ice cream sandwich– one in which the ice cream isn’t too soft & the chocolate from the cookie doesn’t become too firm. How To Make Mini Chocolate Chip Cookie Ice Cream Sandwiches
One bag of The Provisions By Rebecca Gordon’s Buttermilk Lipstick Bakeshop & Larder Miniature Chocolate Chip Cookies will yield approximately 8 adorable ice cream sandwiches. When entertaining, expect that each guest will indulge in two or three so purchase the amount that may be needed accordingly.
The Technique
Place a quarter sheet pan lined with parchment paper in the freezer for 30 minutes. Portion level scoops of vanilla ice cream using a 4 teaspoon-size cookie scoop over the parchment paper. Freeze up to 12 hours in advance. Sandwich the ice cream between two Miniature Classic Chocolate Chip Cookies just before serving.
