Lemon-Dill Tomato & Spinach Salad With Quinoa

Using ancient grains in salads & side dishes prepared with fresh herbs & seasonal produce are a healthy way to enjoy beautiful garden harvests. This particular combination of flavors features Campari tomatoes, fresh spinach leaves & cucumbers with just a smattering of quinoa & Lemon-Dill Fresh Purple Hull Pea Relish. The marinade for the relish is versatile in that it may be used to dress the salad as well. Prepare it up to 5 days in advance & spoon it over salads & grilled meats all week for a fresh burst of summer goodness. Many different tomato varieties may be used in place of the Campari so either pick up your favorites from the market or harvest them from your garden. makes 4 servings

4 cups fresh spinach leaves
3 Campari tomatoes, quartered
1/4 small cucumber, sliced
1/4 cup Lemon-Dill Fresh Purple Hull Pea Relish with marinade
1/4 cup Basic Quinoa
1/4 cup toasted pecans 
Kosher salt & freshly ground pepper

Arrange the spinach leaves between 4 plates, then top with the tomatoes & the cucumbers. Divide the Lemon-Dill Fresh Purple Hull Pea Relish over them. Top with the Basic Quinoa & the pecans. Sprinkle with salt & pepper & drizzle a bit of the marinade from the peas over the salads, if desired.

When preparations are to be made for cold salad applications, drizzle with a little olive oil & allow it to cool completely. Chill well & add the remaining ingredients or integrate as directed according to specific recipe applications. Cooked quinoa can be added to soups to boost nutritional value. Spoon a bit into bowls just before serving.
