White Asparagus

White asparagus can be used a number of ways in recipe applications. It can be served simply pairing well with grilled chicken, steak & pork tenderloin or dressed with a rich sauce. White asparagus is grown underground which prevents color as it has not yet produced chlorophyll from the rays of the sun that would otherwise give it the classic green hue. It is a perennial plant that may be found during the spring. It may be prepared & used just like its traditional counterpart making it a wonderful side dish when grilled, roasted or sautéed, added to grain based or leafy green salads filled with seasonal vegetables & so much more. Learn how to prepare white asparagus for a variety of cooking applications.

The most straightforward method to prepare white asparagus for any cooking application is to hold one of the stems & remove the bottom 1 to 2-inches. It will naturally snap where the stem becomes tough. You can then use that stem as a guide & cut the remaining pieces, in batches, using a chef knife. Be certain to rinse the asparagus under cool water to remove any grit or dirt. Use as directed in specific recipe applications.
