The Technique
The most straightforward method to prepare white asparagus for any cooking application is to hold one of the stems & remove the bottom 1 to 2-inches. It will naturally snap where the stem becomes tough. You can then use that stem as a guide & cut the remaining pieces, in batches, using a chef knife. Be certain to rinse the asparagus under cool water to remove any grit or dirt. Use as directed in specific recipe applications.
