The Technique


Celery, Apium gravolens, is a member of the Aplaceae family that is grown for it’s leaves, stalks & seeds used for a wide variety of kitchen applications. The stalk is composed of naturally fibrous ribs that flavor soups such as Zuppa Toscana, main dishes, lunch favorites including chicken salad & sides beautifully or it may accompany appetizers for dipping when parties are planned. The holy trinity is a classic culinary seasoning blend that features celery, green bell pepper & onions often found in recipes such as Red Beans & Rice, Chicken & Sausage Gumbo & Jambaylaya. Although the vegetable is comprised of 95% water, it’s an antioxidant & considered to be a good source of vitamin K. Learn how to store & prepare celery for a number of uses.

How To Store & Use Celery

Many classic Louisiana recipes use a combination of aromatic vegetables referred to as the holy trinity to season dishes such as Classic Sausage Jambalaya or Red Beans & Rice. During the summer months, celery is the ideal addition to many side dishes such as slawpotato salad plus it’s a natural accompaniment for a variety of hot wing flavors.

Expect a shelf life of approximately 3 weeks when celery is stored properly. Leave it in the produce bag & remove ribs as needed for recipe applications. Rinse it under cool running water, then trim. Discard the leafy area using a chef knife. Although not necessary, run a vegetable peeler down the ribs to reduce the strings. To dice the celery rib, cut it in half then slice lengthwise once or twice. It may then be cut further by slicing horizontally.
