A lovely selection of handcrafted cakes are ideal to offer guests for a number of spring occasions from weddings & bridal teas to baby showers & Easter celebrations. Hummingbird Cake is a classic that originated in Jamaica. It was first published by their tourism board around 1968 & is named for the national bird. It is also known as Doctor Bird Cake on the island as it is a title the locals use to reference the hummingbird, too. The cake gained notoriety when L. H. Wiggins won the Favorite Cake Award at the Kentucky State Fair in 1978. Since that time, it has been considered a timeless regional favorite in the southern United States. Hummingbird Cake generally consists of two or three cake layers filled with banana, pineapple, nuts & a bit of spice that is finished in a rich cream cheese frosting. The basic components are a lovely spring board that may be used to create a variety of new styles you’re certain to love just as much as the beloved original. How To Make The New Collection Of Hummingbird Cakes

Most everything lovely that comes out of your kitchen begins with planning & logistics. From curating the finest ingredients to making certain supplies are available to create beautiful & delicious cakes, many tasks must be taken care of before baking can even begin. Several of the cake styles I’ll be featuring will require specific pan styles. Many of these items may be purchased online or from fine cook stores. Determine what you’d like to focus on first, then make your purchases, if necessary. What distinguishes a Hummingbird Cake from other styles are the specific additions. Cinnamon will offer lovely spice notes. Have crushed pineapple available & very ripe bananas for the best flavor. The layers are generally finished with a cream cheese frosting so butter, cream cheese & a smidgen of fresh lemon juice will counter balance the confectioners sugar based frosting beautifully.

Have plenty of fresh eggs & let them stand on the counter approximately 20 minutes before using them in recipes. They are the foundation to cake structure & determine a bit of the texture in the final cake. Standard all purpose flour may be used for most formulas & although sifting isn’t necessary, loosen it a bit with a fork & scoop it into measuring cups as opposed to filling them with a heavy hand. Swipe any excess from the top to create a level surface with a knife. Butter will offer good taste while standard granulated sugar balances the spice profile of this classic cake. Use whole buttermilk as the fat will deliver a more moist texture.
