How To Use Heavy Cream In Savory Applications

Heavy cream is defined by the amount of fat content it contains, generally between 36% to 40%. It naturally rises to the top due to this extra weight. In comparison, basic whipping cream only contains approximately 30% milk fat, the minimum amount required in order to whip & hold soft peaks. Expect cream to double in volume when it is whipped.

Reductions are one of the most common ways to add rich flavor to recipes. They may be used to create many creamed-based dishes as their ability to thicken beautifully without the need to make a roux offers effortless indulgence. Shrimp Fettuccine Alfredo & Crawfish Étouffée illustrate this concept beautifully. As in the case of classic southern side dishes, Creamed Corn benefits with a just a splash of heavy cream added to the end of the cooking process & needs just a a few minutes to thicken over a hot stove eye. Replace a bit of whole milk in your favorite mashed potato or macaroni & cheese recipe with heavy cream when added indulgence is desired.
