How To Use Heavy Cream In Savory Applications
Heavy cream is defined by the amount of fat content it contains, generally between 36% to 40%. It naturally rises to the top due to this extra weight. In comparison, basic whipping cream only contains approximately 30% milk fat, the minimum amount required in order to whip & hold soft peaks. Expect cream to double in volume when it is whipped.
