Grilled Chicken-Avocado Gorditas

Grilled Chicken-Avocado Gorditas may be prepared with Salt & Pepper Grilled Chicken however smoked chicken is a lovely way to enjoy them when entertaining, too. Although this particular variation features Charred Salsa Verde & avocado, consider switching them up with Salsa Roja, Monterey Jack cheese, serrano peppers & radishes for wonderful crunch. Serve them with tortilla chips & margaritas for a festive fall celebration

makes 4 servings

12 Classic Gorditas
2 cups cooked & shredded chicken
1/2 cup Charred Salsa Verde
1/2 cup crumbled queso fresco
1 avocado, diced
1 Tbsp minced jalapeño 

Split the Classic Gorditas in half horizontally using a serrated utility knife. Divide the chicken between the Classic Gorditas. Top with the Charred Salsa Verde, the queso fresco, the avocado & the jalapeño.

 How To Roast Tomatillos

 Charred Salsa Verde is a fresh & wonderful accompaniment to Grilled Chicken-Avocado Gorditas. Once the husks have been removed & the sticky residue rinsed from the exterior, tomatillos may be roasted quickly then pulsed in the food processor with an array of additional flavorful ingredients.

Slice the tomatillos in half. Place them cut side down on a quarter sheet pan. Broil 4 to 5 minutes or until the skin begins to blister. Remove the pan from the oven & turn the tomatillos so as they are cut side up. Broil an additional 4 minutes or util the edges begin to char. Remove from the oven. Cool 10 minutes. Proceed according to specific recipe instructions.
