Fresh Mozzarella
Fresh mozzarella is a bright white, mild tasting cheese most often made from pasturized milk. The most traditional method for preparing the cheese that originated from Italy is crafted from the water buffalo, however many good versions are successful if made from cow or goat milk as well. Fresh mozzarella is a sliceable curd cheese that may be added to all sorts of recipes ranging from Whole Wheat Margherita Pizza & Spinach-Pecan Piadine to Caprese Pasta Salad. The delicate flavor allows other bold taste notes such as fresh basil to really shine in these dishes. Fresh mozzarella may be easily purchased from your local market in many forms from logs that are ideal for slicing to large, medium & small pearls. I prefer the latter for the sake of ease as they are the perfect bite-sized morsels for salads, pizza & pasta combinations.

How To Use & Store Fresh Mozzarella
Fresh mozzarella is a soft, cheese that may be eaten just after it’s prepared as there is no aging involved in the process. It may be used when preparing classic Italian recipes ranging from lasagna & panini’s or marinated to accompany with prosciutto on antipasto platters.
The Technique
The shelf life of fresh mozzarella is a bit shorter than most aged cheeses so it’s important to use it in a timely manner. It will last longer if it is kept in it’s original packaging & immersed in the liquid. Tuck any open portions into a plastic bag if a sealable container was not provided. Store in the refrigerator up to 5 days.
