A classic combination of bay leaves, mustard & dill seeds, black peppercorns & allspice are just a few items that may be combined to season a brisket. Corned Beef Pickling Spice Blend utilizes many ingredients you probably already have in your cupboard & are ideal for a spring recipe icon. Spice blends that use a variety of items may be prepared well in advance. You may make enough for use in one recipe or more, the choice is yours. The key to preserving the flavor is to be certain to store the combination in an airtight container so choose something with a tight fitting lid. Once the ingredients have been combined & transferred, place the container in a dark cool location. Use within a few months for the best flavor.

makes 1/3 cup

4 small dried bay leaves
2 Tbsp yellow mustard seeds
1 Tbsp whole allspice berries
2 tsp brown mustard seeds
2 tsp black peppercorns
1 1/4 tsp crushed red pepper flakes
1 tsp dill seeds
1/4 tsp ground ginger
1/4 tsp ground cinnamon

Combine all of the ingredients in a small bowl. Use as directed in specific recipe applications.
