Homemade Red Enchilada Sauce
makes 3 1/2 cups
1/4 cup vegetable oil
3 Tbsp all purpose flour
3 Tbsp chili powder
1 tsp cumin
1/4 tsp ground red pepper
Kosher salt & freshly ground black pepper
2 garlic cloves, pressed
2 1/2 cups chicken broth
2 {8-oz} cans tomato sauce
1 tsp apple cider vinegar
1 tsp dark brown sugar
Whisk together the oil, the flour, the chili powder, the cumin & the ground red pepper in a 4 quart sauté pan over Medium heat until bubbly. Season with a smattering of kosher salt & freshly ground pepper. Whisk the mixture constantly. Cook 1 minute. Add the garlic. Cook until fragrant, about 45 seconds. Whisk in the chicken broth, the tomato sauce, the vinegar & the brown sugar until smooth. Season with a smattering of kosher salt & freshly ground pepper. Bring the mixture to a boil over Medium-High-heat, whisking constantly, until thickened & bubbly, about 5 minutes. Continue cooking an additional 3 minutes or until thickened & bubbly over the surface. Remove from the heat. Cool 30 minutes. Store covered in the refrigerator up to 2 days or freeze up to 1 month. Use as directed according to specific recipe applications.
