How To Prepare Iceberg Lettuce Wedges
The first step to preparing a lovely wedge salad is making certain a head of iceberg lettuce has been cored, cleaned & dried properly. Removing as much of the excess water from the leaves will ensure it remains crisp. Look to The Basics: Iceberg Lettuce for complete instructions on how to achieve this successfully. Next, it’s a matter of making a few simple cuts.
The Technique
Place a damp cloth under a cutting board. This will stabilize it & keep it from moving for the sake of good safety practices. Place the iceberg lettuce on the board leaf side up. Using a freshly sharpened chef knife, cut the head of lettuce in an X fashion & allow the wedges to naturally fall away from the center into perfect wedges. Proceed with recipe instructions as directed.
