makes 4 servings

2 Tbsp butter
1/2 small vidalia onion, chopped
1 lb fresh or frozen butter beans
2 cooked bacon slices, finely chopped
1/2 tsp kosher salt 
Freshly ground pepper
A pinch of crushed red pepper flakes
3 cups water

Melt the butter in a 2-quart saucepan over Medium heat. Add the onion & cook 3 to 4 minutes or until translucent. Add the butter beans, the bacon, the salt, a smattering of pepper & the crushed red pepper flakes. Stir in the water. Bring the mixture to a boil. Reduce the heat to just below the Medium setting & simmer, stirring occasionally, 25 to 30 minutes. Serve with a slotted spoon.
