How To Slice Sandwich Bread Rolls
It may seem like a relatively straightforward technique & truly it is. However, the right equipment will be necessary in order to create sliced rolls that may be used for classic Mexican sandwiches such as El Pepito Tortas & Mexican Beef Milanesa Tortas. They should yield an even, consistent result without jagged edges & the interior of the bread should not tear & create extra large crumbs in the center if performed correctly. The Technique
Place a damp kitchen towel under a clean cutting board. This will keep the board stable & prevent it from moving when in use. Place a homemade yeast bread selection such as a Buttermilk Bolillo or a Buttermilk Telera Roll on the surface. Using the bread knife, gauge the center of the roll horizontally & begin using a sawing motion with the knife while positioning your other hand over the top. Spin the roll simultaneously in a counterclockwise motion while continuing the slicing of the roll until you end up where you originally began. Put the knife down & remove the top of the roll. Use as directed in specific recipe applications.
