Bench Scraper
A bench scraper is a valuable tool the may be used for many bread, pastry & cookie techniques. How To Use Bench Scrapers
Bench scrapers are just the right tool to use when slicing chilled butter doughs & more. The blunt metal end is much safer for you & the surfaces over which it is used compared to a sharp knife. They may be found through a quick internet search from many retailers that specialize in bakeware.
The Technique
Bench scrapers are particularly helpful in the bakeshop when working with sticky doughs. With a bit of extra flour, it can aide in kneading procedures as in the case of Buttermilk Bolillo dough. Sprinkle a little flour just under one side of the dough & over the metal portion of the tool, then place it between the work surface & the dough. Lift the dough towards the center then repeat the process around the entire circumference. Continue the task according to specific recipe instructions.
