The Basic Fundamentals

Soften butter on the countertop for at least 20 minutes before blending dough to ensure it’s airated properly with the sugars.

1 cup butter, softened
1 cup sugar
1 cup dark brown sugar
1 cup creamy peanut butter
2 tsp vanilla extract
2 eggs
2 3/4 cups all purpose flour
1 1/2 tsp baking soda
1/2 tsp kosher salt
2 1/2 cups granola cereal
1 cup white chocolate morsels
1 cup bittersweet chocolate morsels 

Preheat the oven to 350 degrees. Cream the butter & the sugars with an electric stand mixer on Medium speed. Stop to scrape the sides of the bowl often with a rubber spatula. Add the peanut butter & vanilla. Blend just until combined. Add the eggs & blend just until combined. Whisk together the flour, the soda & the salt. Add to the butter mixture & mix on Low speed. Add the granola & the white & bittersweet chocolate morsels blending just until combined. Drop heaping tablespoons of dough onto lightly greased, foil-lined baking sheets. Lightly press the mounds of dough with your fingertips to slightly flatten. Bake one pan at a time for 9 to 11 minutes or until puffed & set.

The Extra Point

Substitute chopped toffee candy bars in place of the bittersweet morsels for a delicious variation.

When preparing baking recipes that call for brown sugar, it’s important to get an accurate measurement. Be certain to pack it tightly in the measuring cup & level with a knife, if necessary. Once you have the proper amount, add it as is to the recipes or crumble through your fingers to break it up to ensure the proper blending takes place.
