The Basic Fundamentals

Soften butter on the countertop for at least 20 minutes before blending dough to ensure it’s aerated properly with the sugars. Place the portioned dough about 1 1/2-inches apart on prepared pans & bake them one at a time for the best results.

The Provisions Bakeshop & Larder: Peanut Butter-Granola Double Chip Cookie Mix
1/2 cup softened butter
1 large egg
1/2 cup peanut butter

Preheat the oven to 350 degrees. Beat 1/2 cup softened butter & the sugar from the Peanut Butter-Granola Double Chip Cookie Mix packet with an electric stand mixer on Medium 60 seconds. Stop to scrape down the sides of the bowl with a rubber spatula. Blend in 1 large egg & 1/2 cup peanut butter on Low 30 seconds or just until combined. Stop to scrape down the sides of the bowl with a rubber spatula. Add the cookie mix, the granola & the chocolate chips from the packets. Blend 20 seconds. Portion the dough with a standard-size cookie scoop. Place on parchment paper-lined half sheet pans. Lightly press the mounds of dough with your fingertips to slightly flatten. Bake 9 to 11 minutes or until puffed & set. Cool completely.
