The Technique
Lavender Sugar
Dried lavender opens many possibilities for use in the kitchen. The sweetly scented buds may be found for purchase from specialty markets or stores dedicated to offering a fine selection of herbs & spices. Crushing them is the best way to release the essential oils so that they may be added to sugar, cookie dough, cakes & so much more. If you’ve ever wanted to try lavender in cooking applications, Lavender-Cornmeal Sablé Cookies are a good starting point. Handcraft a small batch then use the remaining Lavender Sugar to sweeten a cup of tea.
Lavender Sugar
makes 2/3 cup
1 tsp dried culinary lavender
2/3 cup granulated sugar, divided
Crush the dried lavender using a mortal & pestle until ground. Place half of the sugar in a food processor & top with the crushed lavender. Pulse 10 to 20 seconds or until the sugar & the lavender are well blended & dispersed. Transfer the mixture to a small bowl & stir in the remaining sugar. Store in an airtight container up to 1 month.

How To Use A Mortar & Pestle
A mortar & pestle is a valuable tool for use in the kitchen. It may be used to grind ingredients into pastes & powders for use in a variety of applications. They are made of study materials such as marble, stone or wood. The mortar refers to the bowl while the pestle is used to crush the items.
The Technique
Place the dried lavender in the bottom of the mortar. Use the pestle to press & push it against the bottom & sides. Repeat the motion until it becomes a feathery consistency. Use as directed in recipe applications.
