Spiced Pecans
Spiced pecans would make a welcome appearance around the holidays at our house growing up. When a batch was prepared, you knew that Christmas was fast approaching. Cinnamon-Sugar Buttered Pecans are a simple recipe offering versatile serving options. Sprinkle the nuts over cakes, pies, pancakes or waffles for an irresistible addition. A blend of mixed salad greens, sliced apple & champagne vinaigrette becomes something more lovely when a few of the warmly scented pecans are sprinkled over the top. Follow my pointers & learn the technique for making a little seasonal goodness.
Cinnamon-Sugar Buttered Pecans
makes about 1 cup
1 cup pecan halves, chopped
2 Tbsp melted butter
A pinch of kosher salt
4 tsp granulated sugar
1/4 tsp ground cinnamon
Toss together the pecans & the butter in a small bowl. Spread the mixture onto a parchment paper-lined half sheet pan in a single layer & sprinkle with the salt. Bake at 350 degrees for 8 to 10 minutes, stirring halfway during the bake time, until fragrant & toasted. Stir together the sugar & cinnamon in a small bowl. Toss the warm pecans into the mixture coating well. Spread the pecans on parchment paper. Cool completely.

How To Prepare Spiced Pecans
The secret to irresistible spiced nuts lies in the procedure. Although the recipe calls for chopped pecans, pecan halves can be substituted & served around the holidays during the social hour. A few simple techniques will ensure success in your own kitchen.
The Technique
Toasting pecans in butter adds a decadent flavor while the spice offers a welcome seasonal appeal. You may want to prepare a double batch as these are ideal for a number of recipe applications & they can be enjoyed with cocktails during open house gatherings. Here’s what you should know.
No. 1
Start by coarsely chopping the pecans yourself. Run a chef knife over the pecan halves 2 or 3 times & that is all. The size will make the presentation much more appealing. Melt the butter in a small bowl & toss the nuts in it until they are well coated. Spread the mixture onto a parchment paper lined half sheet pan & bake them as directed.
No. 2
Combine the cinnamon & the sugar in a small bowl. As soon as the pecans have been removed from the oven, lift the parchment paper & funnel them into the bowl. Toss the nuts around just a bit until well coated.
No. 3
Allow the pecans to cool completely before using in recipe applications. Spread the coated nuts over parchment paper being certain they are arranged in an even layer.
