Game day snacks need not be complex in order to taste wonderful. With a little planning, the components of House Barbecue Gridiron Sliders will yield one delicious tailgating party appetizer. Poppy Seed Pan Rolls may be prepared up to one month in advance, then thawed in the refrigerator overnight. Simply slice as directed. makes 4 servings
Game Changer
Football fanatics are sure to tackle a platter of these hearty bites quickly. Try a variety of delectable cheeses such as Havarti & Cheddar or add extra heat with Pepper Jack for an equally tasty appetizer.
1 {8-oz} package Poppy Seed Pan Rolls, split horizontally
1 Tbsp coarse grain mustard
2/3 cup shredded cheese such as Gruyere, Gouda & Jarlsberg
3/4 cup shredded & chopped Sweet Chili-Lime Smoked Pork Shoulder
Cranberry-Jalapeno Jam
Preheat the oven to 350 degrees. Spread the bottom of the rolls with the mustard. Place the roll bottoms on a foil-lined half sheet pan. Layer the rolls with half of the cheese. Top with the Sweet Chili-Lime Smoked Pork Shoulder. Sprinkle with the remaining cheese; add the roll tops. Loosely cover the roll tops with foil. Bake 25 to 30 minutes or until the cheese melts & the pork is heated through. Pull the rolls apart & serve with the Cranberry-Jalapeno Jam.

Cranberry-Jalapeno Jam
makes 2 cups
The Basic Fundamentals
The jam will thicken as it cools.
1 {12-oz} package fresh cranberries
1 1/3 cups sugar
3/4 cup water
3 Tbsp fresh lime juice
2 tsp minced jalapeno
Bring all of the ingredients to a boil in a 4-quart saucepan over Medium-High heat. Reduce the heat to Medium & cook, stirring occasionally, 6 minutes or until the mixture begins to thicken. Cook an additional 2 minutes, stirring constantly. The cranberries will pop as they cook. Remove the saucepan from the heat; let stand 10 minutes. Pour into a glass bowl. Refrigerate 4 hours or overnight.

Serve the jam over weekday lunch sandwiches, dollop over salads or accompany with grilled chicken & pork tenderloin.

No. 1
