Mini Southern-Style Cuban Panini Sandwiches
makes 2 dozen
The Basic Fundamentals
Smoked pulled pork may prepared from scratch or purchased from your favorite BBQ joint up to one day ahead of time.
1 {8-oz} French baguette, cut into 1/3-inch slices
Hot Whiskey Mustard
12 Swiss cheese slices, quartered
12 ounces Smoked Pulled Pork
Classic Dill Pickle Chips
3 Tbsp melted butter
Garnish: Freshly ground pepper
Spread one side of each bread slice with the Hot Whiskey Mustard. Layer half of the bread pieces with half of the cheese, the pork, a few Classic Dill Pickle Chips & the remaining cheese. Top with the remaining pieces of bread, mustard side down. Brush the tops with half of the melted butter & place 6 to 8 at a time buttered side down on a hot panini press. Brush with additional butter & cook 2 to 3 minutes or until the cheese melts. Serve with additional dill pickles & mustard. Garnish, if desired.

Hot Whiskey Mustard
makes about 3/4 cup
The Basic Fundamentals
Cold liquids produce a hotter flavor while yields a spicer condiment. Proceed according to your personal preference.
1/3 cup apple cider vinegar
3 Tbsp whiskey
2 Tbsp brown mustard seeds
2 Tbsp yellow mustard seeds
1 Tbsp brown sugar
1/2 tsp kosher salt
1/4 tsp turmeric
1/4 tsp garlic powder
1 Tbsp cold water
Combine the vinegar, the whiskey & the mustard seeds in a small bowl. Cover & let stand at room temperature 24 hours. Place the mustard seed mixture in a food processor. Add the brown sugar, the salt, the turmeric & the garlic powder. Pulse the mixture until the seeds are crushed & well blended, about 3 to 4 minutes. Stop the food processor several times during the process & scrape down the bowl sides. Transfer to a glass container & stir in the water. Chill. Cure 48 hours before serving. Store in the refrigerator up to 3 months.

Use the mustard to make a pungent chicken salad or add to salad dressings for a lovely kick.
Triple Threat Snack Mix
makes about 15 cups

This spicy combination features three varieties of pepper & is quite addictive.
Chalk Talk Crackers
6 cups corn cereal squares
4 cups pretzels sticks
1 cup lightly salted, roasted almonds
1 cup lightly salted cocktail peanuts
1 1/4 tsp kosher salt
3/4 tsp freshly ground black pepper
3/4 tsp crushed red pepper flakes
1/4 tsp ground red pepper
1/2 tsp garlic powder
1/3 cup melted butter
3 Tbsp apple cider vinegar
Preheat the oven to 250 degrees. Prepare the Chalk Talk Crackers as directed. Combine the cereal, the pretzels, the almonds & the peanuts in a large bowl. Set aside. Stir together the salt, the black pepper, the crushed red pepper, the ground red pepper & the garlic powder in a small bowl. Sprinkle over the cereal mixture & give it a toss. Stir together the melted butter & the vinegar. Drizzle half of the butter mixture over the cereal & toss well to coat. Repeat. Spread the cereal mixture onto a lightly greased half sheet pan. Bake 1 hour, stirring every 20 minutes. Sprinkle generously with additional kosher salt & freshly ground pepper. Cool completely. Store in an airtight container up to 5 days.
