makes 1 cup

1/4 cup honey

2/3 cup peach preserves
3 Tbsp finely chopped toasted pecans
2 Tbsp coarse grain mustard
1 Tbsp prepared horseradish
Stir together the peach preserves, the mustard, the horseradish & the pecans in a small bowl. Use as directed.

Serve the sauce with grilled chicken or pork tenderloin for a touchdown of suppertime taste.

Flattening the chicken will allow it to fit onto the biscuit better & makes the appetizers easier to eat. Use a wooden pick to secure the tops adorn with a Football Pennant for a dose of school spirit, if desired.
2 lbs boneless, skinless chicken breasts
3/4 cup milk
1 egg
3/4 cup plain yellow cornmeal
3/4 cup all purpose flour
1 Tbsp paprika
2 tsp poultry seasoning
1 1/2 tsp kosher salt
1 tsp garlic powder
1 tsp celery salt
Vegetable oil
Cut the chicken into 1 x 1/2-inch pieces. Working in batches, place a piece of plastic wrap over the pieces & lightly flatten to a 1/4-inch thickness using a rolling pin. Whisk together the milk & the egg in a medium bowl. Add the chicken, coating well. Whisk together the cornmeal, the flour, the paprika, the poultry seasoning, the kosher salt, the garlic powder & the celery salt in a medium bowl. Dip the chicken pieces into the cornmeal mixture, shaking off the excess.
Pour the oil to a depth of 1 1/2 inches in a Dutch oven & heat to 360 degrees. Drop the chicken pieces into the oil & fry, in batches, 3 minutes or until golden brown & the chicken registers at least 175 degrees. Allow the oil to return to 360 degrees before dropping a new batch. Remove from the oil & drain on a rack over paper towels. Sprinkle with additional kosher salt, if desired. Use as directed.

makes about 4 dozen
The Basic Fundamentals
A hint of sweetness & buttery notes make these biscuits irresistible. Freeze the cut biscuits on a sheet pan & place in zip top bags. Store in the freezer up to one month. Bake the desired number of biscuits, as directed, increasing the bake time by a few minutes, if necessary. If preparing the entire batch from the frozen state, place 1/2-inch apart on two sheet pans for the best results.
4 3/4 cups soft-wheat flour
2 Tbsp baking powder
1 3/4 tsp table salt
1 cup cold butter, cut into small cubes
1 1/3 cups plus 1 Tbsp whole milk
2 Tbsp honey
Melted butter
Preheat the oven to 500 degrees. Whisk together the flour, the baking powder & the salt in a large bowl. Cut the butter into the flour mixture with a pastry blender until it resembles the size of small peas. Whisk together 1 1/3 cups milk & the honey. Blend the milk mixture into the flour mixture just until a sticky dough comes together.
Turn the dough out onto a heavily floured surface & knead 2 to 3 times. Pat the dough to 1/2-inch thickness & portion with a 2-inch round cutter. Place on a lightly greased half sheet pan with the edges just touching. Reroll the dough & repeat. The pan will be full. Brush the remaining 1 Tbsp milk over the dough tops. Place in the oven, & reduce the temperature to 400 degrees. Bake on the middle oven rack 18 to 20 minutes or until lightly browned. Brush with melted butter, if desired. Use as directed.

How To Set Up A Frying Station
Planning & logistics is key to accomplishing any task & frying chicken is no different. Organization will keep food safety at the forefront as well as ensure a smooth process from start to finish. Follow these tips to ensure success in your own kitchen.
The Technique
Set up a dredging station on your countertop or organize the food on half sheet pans on a small table if cooking outdoors. Line up the items in the order in which they will be used. Start to one side of the hot grease with the final item in the lineup being a wire rack covered in paper towels to drain the hot food. Have several pairs of tongs to use for different tasks. Use one pair to dredge raw foods & slip items into the hot oil. Use another pair of tongs to turn pieces while cooking or remove them from the grease. A spider or a large slotted spoon is a great tool for retrieving the food from the grease, too.
