Versatile Players

The Mascots

We love them to pieces. The spirit shared with big & especially small football fanatics makes game day all that much better. Decked out in team jerseys, hats & larger than life features, these lively comics can’t help but make you smile. Since breakfast specialties rank as crowd-pleasing tops, it seems only fitting to honor our wacky-good friends with a recipe all their own. Tiger Tails In A Blanket utilizes the convenience of frozen biscuits that are wrapped around miniature smoked sausages for a tail spinning appetizer. The tasty morsels sport added flavor with a touch of brown sugar & mustard baked on the inside of the filled biscuits. Preparing them in cake pan offers a simple way to maneuver & serve this easy snack that can certainly be offered beyond traditional breakfast hours plus allows them to be topped with a melty blanket of cheese for an added bonus. Plan to have these on the tailgating table anytime of the day & expect a round of cheers from your fan-favorite home team.

The Basic Fundamentals

Mary B’s Frozen Tea Biscuits offer a delicious taste without an added sweet flavor. The recipe works best & fills the pan perfectly with 14 miniature biscuits but often times you’ll get several extra biscuits in the bag. By all means double the recipe & bake the two pans together as directed if serving a larger crowd.

14 miniature frozen tea biscuits
1 Tbsp coarse grain mustard
1/2 tsp dark brown sugar
14 miniature cocktail-size sausages
1 Tbsp melted butter
3/4 cups shredded sharp Cheddar cheese
3/4 cup orange marmalade
1 Tbsp minced jalapeño
Garnishes: Cheddar cheese, jalapeños & chopped fresh cilantro

Place the biscuits on a parchment paper-lined half sheet pan. Cover with plastic wrap & let stand at room temperature to thaw, about 1 hour. Preheat the oven to 350 degrees. Stir together the mustard & the brown sugar. Slightly flatten the biscuits. Brush with mustard mixture. Wrap the biscuit around a miniature sausage, pinching the edges to seal. Place the biscuits seam side down in a lightly greased 8-inch cake pan. Brush with the melted butter. Bake 35 minutes. Sprinkle with the cheese & bake an additional 5 to 10 minutes or until the cheese melts. Stir together the marmalade & the jalapeño in a small bowl. Serve with the biscuits. Garnish, if desired.

The Extra Point

Try a different combination of jams & jellies to serve with the appetizer. Peach or blackberry preserves would compliment without flaw & the jalapeño would add just the right amount of heat.
