Tradition runs deep in College Station starting with the Corps of Cadets or “Keepers Of The Spirit” who play an active role not only in United States military service but keep the Aggie’s time-honored heritage front & center. Although serving was mandatory when the doors first opened, it’s now voluntary. One of the most coveted traditions associated with the Corps is when a cadet receives his Senior Boots, a custom pair of brown riding boots that are worn for the first time during a ceremony to honor outgoing seniors. Aggieland is also The Home Of The 12th Man, a group that stands during football games to symbolize their willingness to help out if called upon & instead of cheerleaders, five Yell Leaders elected by the student body rally fans during the games. And then there’s the lady of the house, Reveille, a Rough Collie who is treated as campus royalty. Reveille Pimiento Cheese Biscuits pay homage to their beloved mascot & forego the elementary doggie bag. These delightful southern treats are much like the cheese straws that woo attendees at spring cotillions & are not complete without slipping them into her custom Texas A&M clutch. Stationery envelopes sporting team colors are adorn with the school seal star. In conjunction with a ring of olive leaves, they symbolize achievement, peace & strength. Reveille Pimiento Cheese Biscuits
makes about 3 dozen
The Basic Fundamentals
Use a paper towel to press out as much liquid from the pimientos as possible. Sprinkle a little additional flour over the dough, if necessary, for a stiffer dough.
1 cup ap flour
1 1/2 tsp reduced sodium seasoned salt
1/4 tsp ground red pepper
1/4 cup cold butter, cut into pieces
1 {8-oz} package white Cheddar cheese, shredded
1 Tbsp ice water
3 Tbsp minced pimientos, well drained
Pulse the first 3 ingredients in a food processor on Low a few seconds. Add the butter evenly to the work bowl. Sprinkle evenly with the cheese. Blend 15 to 20 seconds on Low until sandy in texture. Drizzle the mixture with the ice water. Blend the mixture 10 seconds on Low. Blend an additional 10 seconds on High until the dough comes together into a ball. Place on a cutting board & knead the pimientos into the dough. Form the dough into a disk & cover with plastic wrap. Refrigerate 30 minutes.
Preheat the oven to 325 degrees. Roll the dough to 1/8-inch thickness on a lightly floured surface. Cut the dough with a 3-inch bone shaped cutter. Place on parchment paper-lined baking sheets. Bake the pans, in batches, 22 to 26 minutes or until very golden brown. Cool completely.
The Extra Point
Substitute Monterey Jack cheese with peppers or Gouda. Any school with a K-9 mascot can toss the biscuits with The Ultimate Game Day Snack Mix in place of the Crunch Time Gouda Crackers.

Fill them with the cheese biscuits.
Arrange in neat rows on an heirloom silver tray.
The Technique
Cut wide strips of white card stock.
Secure in the center of standard note card-size envelopes with tape.
Layer with burgundy & brown craft paper strips. Secure with tape.
Create 1-inch circles using a craft punch from white card stock.
Trace star shapes from a 7/8-inch miniature cookie cutter.
Use scissors to snip them.
Tape to the center of the circles then attach to the middle of the envelope.
Slip a Reveille Pimiento Cheese Biscuit in a miniature candy treat sack.
Place them into the envelopes & arrange on a tray for serving.
