The Basic Fundamentals

Smoked chicken makes a delicious substitution. Serve with Homemade Salsa & Zesty Chipotle-Ranch Sauce to sail them into the zone.

1 {8-oz} package shredded Cheddar-Monterey Jack cheese blend
2 cups shredded & chopped Sweet Chili-Lime Smoked Pork Shoulder
Cooking spray
Championship Caviar
Toppings: Grape tomatoes & Sliced jalapeños

Layer each tortilla evenly with 1/4 cup cheese, 1/4 cup Sweet Chili-Lime Smoked Pork Shoulder & an additional flour tortilla. Cook the tortillas, in batches, in a lightly greased large skillet over Medium heat 2 to 3 minutes per side or until golden brown. Before flipping the quesadillas, coat the tortillas with a quick sweep of additional cooking spray. Cut into wedges. Serve with the Championship Caviar & toppings, if desired.

The Technique

Prepare the quesadillas as directed. Place on a wire rack over a half sheet pan. Slide the pan into a 200 degree oven. Add each quesadilla to the pan after browning in the skillet. To save time, use a pancake griddle so that several quesadillas can be cooked at once. Slice & serve.
