They may be prepared in advance & provide a healthy alternative to traditional chips & basic vegetable offerings. Game Changer

This delicious snack may be prepared with a number of herb & spice combinations. Try using chili powder, a smidgen of brown sugar, cumin & garlic for a barbecue profile. Chopped fresh thyme or rosemary will brighten flawlessly.

2 {15.5-oz} cans chick peas
1 tsp kosher salt, divided 
1 tsp ground cumin
1 tsp paprika
1/4 to 1/2 tsp ground red pepper
2 Tbsp olive oil

Preheat the oven to 400 degrees. Rinse & drain the chick peas in a colander then turn them out onto a stack of paper towels. Blot them dry & let stand 10 minutes. Meanwhile, combine 1/2 tsp salt, the cumin, the paprika & the ground red pepper in a medium bowl. In a separate bowl, toss together the chick peas, the remaining 1/2 teaspoon salt & the olive oil. Pour the chick peas out onto a parchment paper-lined half sheet pan. Bake 25 to 30 minutes stirring three times during the process. Remove from the oven & let stand 10 minutes. Pour the chick peas into the spice mixture & toss together until well coated. Transfer to a fresh piece of parchment paper. Cool completely.

When serving hummus dip to guests for football parties & tailgating socials, Gridiron Roasted Chick Peas make a lovely garnish & contrast. Sprinkle a few over the top & drizzle the appetizer with olive oil just before serving.

The Technique

Hold the microplane grater over a cutting board, allowing the tip to rest over the surface at an angle. Swipe just the outer portion of the citrus over the tool towards the board. Turn the fruit after each swipe. You only want to collect zest with color & not the white, bitter pith just underneath the surface. Repeat the process until you have collected the amount you’d like to add to the recipe.
